Hello B Loved Boston readers! For those of you who don’t know me, I’m Pamela and I blog over at Sequins & Sea Breezes. B and I have been blog friends since we both basically started blogging and we’ve been lucky enough to carry our friendship over into real life so of course I jumped at the opportunity to do a guest post while she is on her amazing vacation overseas. I mainly blog about life and style but today I decided to try something a little different. I LOVE trying out new recipes I find on Pinterest or in random cookbooks I’ve collected throughout the years but I seldom share these recipes with my readers. Don’t get me wrong, it’s not because they aren’t worth sharing. However, most of the time when I make something I don’t even think about taking pictures of it for the blog because I usually devour whatever it is minutes within making it. When I decided to make these strawberries and champagne truffles I knew I had to refrain from scarfing them down long enough to take some pictures and share them somewhere in the blogging universe.
These are the perfect easy dessert for Valentine’s Day, birthdays, bachelorette parties, bridal showers, or pretty much any day that ends in “y”. It also gives you an excuse to pop open a bottle of bubbly (as if you really NEED an excuse) or a way to use any extra champagne you have leftover (don’t worry, I laughed while writing that too… leftover champagne? Ha!) from a celebration.
These are actually really simple to make despite the prep time (don’t worry, most of it is just sitting around waiting for the truffles to harden enough to dip) the rest is pretty much a piece of cake! Ha, like what I did there? They taste amazing and the gold dust makes them look super fancy, no one would ever guess you made these at home and didn’t pick them up from some fancy bakery! Even if they don’t turn out “pretty” they still taste amazing and you’ll have to restrain yourself from eating them all in one sitting.
STRAWBERRIES & CHAMPAGNE TRUFFLES
INGREDIENTS
- 1 box strawberry cake mix
- 1 ΒΌ cups champagne
- ΒΌ cup vegetable oil
- 4 egg whites
- 1 (16 oz.) container cream cheese cake frosting
- 24 oz. bright white vanilla melting wafers
- Β½ tsp Wilton gold pearl dust
INSTRUCTIONS
- Preheat oven to 350 degrees Fahrenheit.
- Spray a 9×13-inch baking pan with nonstick cooking spray.
- In a large bowl beat cake mix, champagne, oil, and egg at medium speed until smooth. Pour batter into prepared pan.
- Bake according to package directions until toothpick comes clean. Cool in pan about 30 mins.
- Crumble the cake into a large bowl with your hands. Add the frosting to the cake crumbles and mix with until evenly combined.
- Line a baking tray with wax paper. Form small round balls. Place the balls on the prepared wax paper lined baking sheet. When balls are complete, place the baking tray in the fridge overnight or in the freezer for 1 -2 hours.
- Melt the white chocolate in a microwave-safe bowl in the microwave on 20-30 second intervals, stirring between each, until smooth.
- Remove the balls from the freezer. Drop balls one at a time into the melted chocolate, be sure to remove any extra melted chocolate from the truffles before transferring back to the wax lined baking sheet. Let them harden completely.
- Paint on the gold dust however you would like to decorate. You can even drizzle some extra white chocolate on top. Just have fun with it!
